Butter Case

Butterkase originated in Germany and is still made throughout Germany and Austria. It's name means "butter cheese". It has a creamy butter like texture and flavor that goes well with most foods. This butterkase is produced in Wisconsin in the Alpine tradition. Melts nicely and can be served with cured meats, grapes, melons, plums, or sourdough bread. May be paired with white wines such as Semillon, Chardonay, or Rhine; pilsner or other light beers.

Wisconsin smeared ripen brick aged for maximum flavor. Very pungent however excellent tasting. - 1 lb.

 

 

Brick is a Wisconsin original, first made by John Jossi around 1877. Some Brick cheeses resemble Germanys surface-ripened Beer Cheese or Beer Kse. Brick was named for its shape and because cheesemakers originally used bricks to press the moisture from the cheese. Wisconsin leads the nation in the production of Brick and surface-ripened Brick. The bacteria that cheesemakers apply to surface-ripened cheeses, known as a smear, develops the full, earthy flavor.

In Wisconsin Muenster was one of the first semi-soft cheeses made by European immigrants in the 1800s, and americans quickly developed a taste for it. Wisconsin Muenster tastes milder and has a firmer texture helping it gain popularity as a great cheese for slicing. It has a mild to mellow flavor that gets creamier with age and a slightly elastic texture. Use in everything from sandwiches and burgers to casseroles and pizza. Goes well with apples and grapes, whole grain breads and crackers, mustard, sausage, pickles, and lager beers.
